With the summer heat upon us in all its intoxicating glory, we have been craving fresh and light food. If you are anything like us at here at Eddy’s, you may have overindulged a tad during the holiday period and are ready for something just a little bit more on the healthy side. We have just the recipe - a lovely crisp salad that goes perfectly with a splash of Eddy’s. Serve as a side or add some feta cheese and call it a meal.
- 3 cups kale washed and diced (or you can use iceberg lettuce or spinach if kale doesn’t take your fancy)
- 1 head of broccoli, chopped into florets
- ½ cup basil leaves
- 2 avocadoes, sliced
- 1 lemon
- Eddy’s Salad Dressing
Bring a pot of water to the boil and place in the broccoli florets for a few minutes until just cooked. Immediately rinse under cold water and drain.
Assemble kale, broccoli, basil leaves and avocado in a large bowl. Stir through the zest of the lemon and squeeze the lemon juice over the salad. Finish with a generous pour of Eddy’s dressing.
Serves 4 as a side.
