Warm Chorizo and Quinoa Salad


At this time of year, a big plate of salad is not a daily occurrence. Here at Eddy’s we have come up with a wonderful winter salad that will hit the spot in the chilly weather. Its packed with super foods like spinach and quinoa that will give you the sustenance you need to get through the colder months. It is great for a quick dinner or served up for lunch the next day. 


Warm Chorizo and Quinoa Salad

  • 1 ½ cups of quinoa, rinsed thoroughly 
  • 3 cups vegetable stock or water 
  • 225g ring of chorizo, chopped into slices
  • 2 red onions, chopped into 6 pieces each
  • 1 cup spinach
  • 200g feta, crumbled
  • 1 punnet cherry tomatoes, chopped in half
  • Eddy’s French Dressing to finish 


Pre-heat oven to 180 degrees. Arrange the chopped red onions and sliced chorizo on a baking tray and bake for 20 minutes. Set aside.

In the meantime, add the quinoa to a medium-sized saucepan along with the water or stock. Cover and bring to the boil. When it starts boiling, reduce to simmer and cook for another 12-15 minutes.

Place the cooked quinoa in a bowl. Stir through the red onions, chorizo and pour over the juices from the chorizo (these will be hot so be careful!). Add the spinach and cherry tomatoes. Add a generous pour of Eddy’s Dressing. Crumble over the feta to serve.
